Creamy High-Protein Cheese Pasta
Ultra-creamy, cheesy and packed with protein. This easy pasta gets its silky sauce from cottage cheese, Gruyère, cheddar, Parmesan and a touch of spicy Sriracha mayo – all blended until perfectly smooth.

Ingredients
- 200 g pasta
- 150 g cottage cheese
- 2 slices Gruyère cheese
- 2 slices cheddar cheese
- 4 La Vache qui rit cheese wedges, unwrapped
- 30 g Parmesan, freshly grated
- 1 tbsp Sriracha mayo
- ½ tsp garlic powder
- 2 tbsp fresh parsley, chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 small ladles pasta water, about 120–150 ml
- Extra Parmesan, for serving
- Fresh parsley, for serving

Cook the pasta
Cook the pasta in generously salted water until al dente. Before draining, reserve at least 200 ml of the hot pasta water.

Build the protein base
Add the cottage cheese to a blender. Add the Gruyère, cheddar and the four unwrapped La Vache qui rit cheese wedges.

Add the flavour
Add the Parmesan, Sriracha mayo, garlic powder, fresh parsley, salt and freshly ground black pepper.

Add the pasta water
Pour in two small ladles of hot pasta water. The heat helps melt the cheeses and creates an incredibly smooth sauce.

Blend until creamy
Blend everything until completely smooth, thick and creamy. If the sauce is too thick, add another small splash of pasta water.

Combine with the pasta
Return the hot pasta to the pot and pour the blended cheese sauce over it. Toss thoroughly until every piece of pasta is coated.

Serve
Serve immediately with freshly grated Parmesan, chopped parsley and freshly ground black pepper.
Carla's Tip
Want it extra creamy? Save a little more pasta water before draining. Add it one tablespoon at a time while tossing the pasta until the sauce is perfectly silky. And don't boil the finished sauce – gentle heat keeps it beautifully creamy.
