Albanian Village Salad

This fresh village-style salad is inspired by the flavors of the Albanian coast: ripe tomatoes, crisp cucumber, sweet peppers, olives, creamy cheese and plenty of good olive oil.

No complicated dressing. No long preparation.

Just fresh ingredients that taste like summer. ☀️

Ingredients

  • 3 ripe tomatoes
  • 1 cucumber
  • 1 red or green bell pepper
  • 1/2 small red onion
  • 80 g feta-style cheese
  • 10–12 olives
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • Fresh parsley, optional
  • Sea salt
  • Freshly ground black pepper

Instructions

    Prepare the vegetables

    Wash the tomatoes, cucumber and pepper. Cut the tomatoes into generous chunks, slice the cucumber and pepper, and finely slice the red onion.

    Build the salad

    Place all the vegetables in a large bowl and gently mix them together.

    Add the Mediterranean flavors

    Add the olives and crumble the feta-style cheese over the salad.

    Dress simply

    Drizzle generously with extra virgin olive oil and season with oregano, a little sea salt and freshly ground black pepper.

    Serve

    Finish with fresh parsley if you like and serve immediately with fresh bread.

Carla's Tip

Use the ripest tomatoes you can find and a really good extra virgin olive oil. When the ingredients are this simple, their quality makes all the difference. And don't forget some fresh bread for the olive oil left at the bottom of the bowl. 😉
